Cardamom

Cardamom derives from a tropical plant of the family of the Zingiberaceae -the same family of ginger- which is called Elettaria. However, the same name also used to name other plants, among which the most similar to the real cardamom is the Amoxmum. In Europe, it was known since the times of the acient Greece and the Romans who used it to produce perfumes. It’s currently the third most expensive spice in the world after saffron and vanilla. Its fruit is a capsule containing many small brown-black seeds which are utilised as spices. They are conserved and commercialized with their whole capsule because they lose their aroma very quickly: once the capsule is broken, the seeds can be used ground or dissolved in a liquid.
